San Lorenzo is a saint and martyr who died in Rome on August 10 in the year 258 AD, during the persecution against Christians unleashed by Emperor Valeriano. This is one of the most venerated saints for many years in various regions of Spain , especially in Huesca .

The stories of his martyrdom tell that Saint Lawrence was assassinated in a fiery grill, for this reason, he has always been represented carrying this element. For this same reason, the grill is one of the main symbols of Huesca and of the Laurentian festivals.
